Preserving the harvest

The peppers have been growing considerably better this year, and as discussed on a previous post we love pickled peppers( well I love most pickled things). Today was spent canning several varieties, Jalapeño, Banana and to a lesser extent a pepper mix medley.

The prep of slicing the peppers went well until it was time to to do the Jalapeños, then the gloves couldn’t be located so I quickly found out where I had scratches on my hand from weeding and removing thorns around the property yesterday. While I was slicing the peppers Becky got the jars prepped and brine going.

Shortly after the jars came out of the water bath we sat down for dinner. Hearing the lids pop as they seal is a joy and equals food ready for the shelf. The work pays off and even though there is always more to do it sure is nice to see the efforts for eating quality food we prepared paying off.
