A few plants is all it takes to yield some pretty decent cucumbers. The day to day changes can have you go from a cuke that is small and deflated looking to the perfect harvest size. Occasionally you will over look one and end up with a giant, and while the giants may not be quite a tender and tasty they are exiting to find. Once you harvest your cucumbers you would be hard pressed to not want to slice one up and lightly salt it before enjoying.
As a child we would take our cucumbers and add lemon pepper seasoning in addition to the plain salted. When we wanted to be fancy we would peel the cucumber first, dipping them in the dressing of your choice will really up the game to the next level. If we wanted to get really into it we would make cucumber sandwiches peeled and sliced cucumbers inside a half of a pita bread with mayo and seasoning of choice. Mouth is watering just thinking about it. And these are just some of our uses. Another favorite use which is shared with the similar looking summer squash is give them away because you have so many. Now don’t get me wrong it’s almost impossible to have to many cucumbers when you preserve them and the best way in my opinion is as dill pickles. Sure you could pickle in other ways, but a nice classic dill pickle is hard to beat. In fact pickles are the main reason we grow cucumbers everything else is just an added benefit.
Get out to the garden and grow some cucumbers there are lots of varieties and things to do with them. But make sure you don’t eat them all before you can make some pickles your taste buds will thank you.
